Katie Lydia Hollingshead Herring, age 65, passed away peacefully on May 31, 2023 at her home in Elsinore, Utah. She was born February 22, 1958 in Milford City, Utah to Marshall and Nellie Hollingshead.
Katie was raised in Minersville, Utah with nine other siblings. She was number eight out of ten. She graduated from Beaver High School in 1976. Katie served a mission for the Church of Jesus Christ of Latter-Day Saints in Auckland, New Zealand from 1979 to 1980. She was very passionate about her mission and loved to tell stories and bear her testimony of faith and love for the Savior.
Katie loved growing up on the farm helping her brothers and Dad. She rolled hay bales with her friend Valerie Wood for a penny per bale at age 12. She shared her stories of driving the hay truck with her brothers and being stronger than any young man around. She loved being a punkin roller, eating sour sockets, sleeping outside, swimming in the creek and floating down the canal in the inner tube.
Later in life Katie attended Evans Hair College and worked in Wyoming for a time. She also served as a crossing guard for the school and loved telling her laffy taffy jokes and talking with her Donald duck voice. She loved her family dearly and looked forward to calling all her siblings, in-laws, nieces, and nephews on their birthdays. She was always looking for someone to play board games with and have a good laugh. She loved being able to serve others and knew all the widows and widowers in town and looked for any way to help them. Her greatest treasures were her children and grandchildren. She passed on her traits of being kind, loving and serving others.
She is survived by her husband John Herring of Elsinore, children Travis (Laraine) Hollingshead, Julie (Ryan) Gaines, siblings Kenneth (Debbie) Hollingshead, Marsha (late Clyde) Harding, Neal (JoDene) Hollingshead, Madelyn (Doug) Nielson, Duke (Jill) Hollingshead, Doris (Boyd) Hall, Chad (Valerie) Hollingshead, Janette (Joe) Hiskey, and Tammy (David) Fairhurst. Grandchildren: Sawyer, Jaylee, Aubrey, and Aliyah Hollingshead; Nola and Camila Gaines. She has 49 nieces and nephews; all who she loved dearly.
